Graham Cracker Roll




1 1/2 cups milk chocolate chips
3/4 cube margarine
1 egg
2 tbsp evaporated milk
1 cup powdered sugar
2 tsp vanilla
11 double (whole sheets) reduced fat graham crackers
16 oz pkg. minature marshmallows

Melt chocolate chips and margarine. In bowl beat egg; add evaporated milk, powdered sugar and vanilla. Reserve 1/3 cup graham cracker crumbs; set aside. Add remaining crumbs, chocolate and marshmallows to bowl, mixing so all are covered. On wax paper spread reserved crumbs. Place filling on top of crumbs. Roll up into a log shape (you may have to make 2 rolls). Freeze until firm. Cut in rounds.
