Meatball Grinders



Ingredients:
1/4 c chopped onion
15 oz can diced tomatoes, drained and juices reserved
8 oz can tomato sauce
2 T tomato paste
1 tsp italian seasoning
1 lb ground chicken
1/2 c fresh bread crumbs (1 slice bread)
1 egg white, lightly beaten
3 T finely chopped fresh parsley
2 cloves garlic, mincedsalt and pepper
4 rolls, split
2 T grated parmesan cheese

Directions:
Slow Cooker directions:Combine onion, diced tomatoes, 1/2 c reserved juice, tomato sauce, tomato paste and italian seasoning in slow cooker. Cover and cook on LOW 3-4 hours. Halfway through cooking prepare meatballs. Combine chicken, bread crumbs, egg white, parsley, garlic, salt and pepper in medium bowl. With wet hands, form mixture into 12-16 meatballs. Spray medium skillet; cook meatballs over medium heat 8-10 minutes or until browned. Place meatballs in cooker; cook on LOW 1-2 hours. Place 3-4 meatballs in each roll. Divide sauce evenly; sprinkle with cheese.
