Jalapeno Corn Bread



Ingredients:
1 cup frozen corn, thawed (or canned, drained)
1 cup skim milk
1/3 cup fat free sour cream
1/4 cup chopped cilantro
1 jalapeno, seeded and chopped
1 tbsp vegetable oil
2 eggs
3/4 cup flour
1 cup cornmeal
1 tbsp sugar
2 tsp baking powder
1 tsp salt

Directions:
Combine wet ingredients in bowl; whisk to combine. Add dry ingredients and stir till moistened. Pour into round baking dish. Bake at 400 for 25 minutes.
