1 cup coconut
1/4 cup butter (room temp.)
2/3 cup sugar
2 eggs
3 Tbsp. milk
1 tsp. lemon juice
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 ripe bananas
Toast coconut on greased pan. Mix together butter and sugar. Beat in eggs. Stir in milk and lemon juice. Sift in dry ingredients and blend together. Work in bananas and most of the coconut. Pour in greased bread pan. Sprinkle remaining coconut on top. Bake in 350 degree oven for one hour.
