Microwave Caramel Corn
1 cup brown sugar
1 stick butter
1/4 cup white corn syrup
1/2 tsp. salt
1/2 tsp. baking soda
4 qt. popped corn
Combine all ingredients but baking soda and popcorn in a 2 quart baking dish. Bring to a boil, then cook at full power for 2 minutes. Remove from oven and stir in baking soda.
Put popped corn in a large paper grocery bag and pour syrup over corn. Close bag and shake. Put in microwave for 1 minute. Take out and shake again. Return to microwave for another 1 minute. Take out and shake. At this point, depending on the microwave, popcorn can either be returned to oven or if it looks done, pour it into container and allow to harden.
