4 to 4 3/4 cup flour
1 pkg. yeast, dissolved in 1/4 cup water with 1 tsp. sugar
1 cup milk
1/3 cup sugar
1/3 cup shortening
1/2 tsp. salt
2 eggs
Scald mild and add sugar, shortening and salt. Cool to just warm. Add 2 cups of flour and eggs and stir. Add more flour and turn dough out onto floured surface and continue to add flour till it will hold together. NOTE: You don't want to add so much flour that you have a heavy ball that is not smooth or elastic. Knead till moderately stiff. Shape in ball and let rise approximately 1 hour. Then--so mine are lighter I let it raise one more time-- usually about 1/2 to 3/4 hour this time. Then make out rolls of your choice. Let rise about 15-30 minutes. Bake 10-12 minutes at 350 degrees.
