Spinach Salad with Honey Mustard Dressing




2 bunches fresh spinach, washed, de-stemmed and torn
6 strips bacon, cooked & crumbled
1 red onion, sliced & seperated into rings
1 pkg fresh mushrooms, sliced
3 boiled eggs, sliced
2 oz shredded mozzarella cheese
Honey mustard dressing

Toss all salad ingredients together in large bowl. Make dressing and serve on side.

Honey Mustard dressing
1/3 cup honey
1/4 cup dijon mustard
1 clove garlic, minced
2 Tbsp lemon juice
1/4 cup rice vinegar
1 cup oil
1 tbsp poppy seeds

Process all ingredients except oil in blender until well mixed. With the motor running add oil slowly in a steady stream until dressing is smooth. Store covered in fridge. Flavor improves if made several hours before using.
