Ingredients:2 cups All Bran cereal
1 1/2 cups milk
1 egg
1/3 cup applesauce
1 1/4 cups flour
1 tbsp baking powder
1/2 cup splenda (or you can use sugar)
1/4 tsp salt
1 apple, diced (optional)
1 tsp cinnamon
Directions:
Preheat oven to 400. Spray a muffin tin with nonstick cooking spray. Soak cereal in milk for 5 minutes to soften cereal. Add egg and applesauce. Add dry ingredients and diced apple if using; stir just to combine. Fill cups almost full. Bake for 18-22 minutes.
