1 tbsp olive oil1 small onion, chopped
8 oz sliced mushrooms
1/2 tsp thyme
2 cups coarsely chopped broccoli
2 cups chicken broth
2 cups milk
1 can cream style corn
6 oz cooked crab meat
3 cups cooked long grain rice
Heat oil over medium-high hear. Add onion, muchrooms and thyme; cook stirring often, until vegetables begin to brown (about 8 min). Add broccoli; cook stirring often until broccoli turns bright green and begins to soften (about 4 min). Stir in broth, mild, and corn; cook just until heated through, do NOT boil. Stir in crab and rice; cook 2-3 min more.
