Dinner in a Pumpkin



1 small to medium pumpkin
1 onion, chopped
2 Tbsp. oil
2 lbs. ground beef
2 Tbsp. soy sauce
2 Tbsp brown sugar
1 can mushrooms, drained
1 can cream of mushroom soup
1 1/2 cups cooked rice
1 can sliced water chestnuts, drained

Cut off the top of the pumpkin and clean out seeds and pulp. Preheat oven to 350 degrees. Place pumpkin with top on onto baking sheet. Place in oven. In large skillet, saute onions in oil until tender. Add meat and brown. Drain. Add soy sauce, brown sugar, mushrooms, and soup. Simmer ten minutes, stirring occasionally. Add cooked rice and water chestnuts. Spoon into pumpkin. Return pumpkin to oven with top on. Bake one hour or until inside of pumpkin is tender. Serve cooked pumpkin with meat casserole.
