Pineapple Drop Cookies
2 cups flour
1 1/2 tsp. baking powder
1/4 tsp. soda
1 tsp. salt
2/3 cup shortening
1 1/4 cups brown sugar
2 eggs
3/4 cup crushed pineapple (well drained)
1 tsp. vanilla
Sift flour once, measure, add baking powder, soda and salt, and sift again. Cream shortening, add sugar gradually, and cream together until light and fluffy. Add eggs, one at a time, beating well after each. Then, add pineapple and vanilla. Add flour, small amount at a time, beating after each addition until smooth. Drop by teaspoon on ungreased baking sheet. Bake in hot oven (400 degrees) for 10 minutes or until done.
